Simple, Healthy, & Delicious Meals

Chicken in 20 – Chicken breasts that are tasty, easy and can be eaten again days later.

Peppers a la Mozzarella – This is a concoction of mine. I came up with it randomly when I was experimenting with what was left over in my fridge and didn’t feel like eating protein (you know meat, not eggs; no breakfast for dinner). More of a vegetarian option, and the cheese can be substituted for tofu for vegans, if preferred. (Haven’t tried that option yet, but I will do so before we meet so I can warn you if it’s a disaster!)

And finally,

For some simple, healthy but decadent fish: Tilapia with Almond Butter – There are two ways to make the butter here, but either is good. =) This is more for seafood lovers, and is one of the healthiest fish after salmon, which can be a substitute for the tilapia.

Cost: $3-$5 depending on the # of people. But we’ll figure that out when I can contact you guys directly.

Hi Guys!

My name is Monica. I’m a 3rd year student in the Faculty of Arts, majoring in Interdisciplinary Studies. I’m more of an artsy person than I am a cook, but I first got interested in cooking back home in Ecuador. The cuisine there is quite diverse and creamy. =) But I got more into actually cooking coming to UBC, especially in second year. I’m from a pretty diverse background. American school, Latin American home and Indian culture and religion. So I know a variety of dishes.

But this club is more for you guys to get some simple, healthy yet scrumptious recipes off me to get you by in the kitchen. These are for when you need a quick meal, or need to cook for more than one meal at once, but really quickly. Normally this would mean using processed foods, pre-cooked dinners or even just getting take out. None if which are very healthy options. And most of the time are just good cause you’re really hungry (we’ve all been there!).

So I hope you guys come with your appetites and even some ideas of your own! We might even be able to make appetizers and a dessert even if time permits. This menu is subject to change based on what you guys want to learn. So PLEASE, CHIME IN. =)
